Lasagna Soup Recipe
Lasagna Soup. Think of it as lasagna, but in a cozy bowl. Made with beef, sausage, spinach, and three kinds of cheese! Perfect for when it’s chilly outside.
At my house, we’ve been all about soups lately. And guess what? My kids are into them too. Lasagna Soup? A big hit!
How to Make Lasagna Soup
- Brown the Meat: Start with a large pot. Medium-high heat. Cook up some ground beef and sausage. Season with salt and pepper. Once browned, drain the grease and set the meat aside.
- Sauté Onion and Garlic: Use the same pot. Heat some olive oil. Toss in diced onion. Sauté for about 5 minutes. Add minced garlic and cook for another minute.
- Add Sauce and Spices: Stir in some tomato paste, marinara sauce, spices, and broth. Toss the meat back into the pot.
- Cook Lasagna Noodles: Bring it all to a boil. Break lasagna noodles into pieces and add them in. Reduce the heat to medium-low. Stir now and then until the noodles are tender. Want some greens? Add spinach if you like.
- Mix the Cheeses: In a small bowl, mix mozzarella, Parmesan, and ricotta.
- Serve It Up: Ladle the hot soup into bowls. Add a scoop of the cheese mix on top. Garnish with fresh basil if you’ve got it.
Planning to Make It Ahead? Or Freeze It?
- To make ahead: Stop at step 4. Don’t add the noodles yet. Keep the soup in the fridge. When you’re ready to eat, warm it up, add the noodles, and continue from step 5. Finish with the cheese.
- To freeze: Skip the cheese. Pour the soup into a freezer-safe container. It keeps in the freezer for 2-3 months. When you want it, thaw it overnight in the fridge. Heat slowly on the stove. For best results, cook fresh noodles before serving.
Fun Variations
- Vegetarian: Drop the sausage and beef. Add more veggies with the onions and garlic. Think zucchini, mushrooms, or squash.
- Vegan: Same as the vegetarian version, plus swap the cheese mix for cashew ricotta.
- Pasta Switch-Up: Use any pasta you like instead of lasagna noodles.
